We have some tasty additions to our online deli. We’re introducing Jamón its Spanish for ham, the meat coming from the rear leg of the pig, or what Italians call ‘prosciutto’.

Jamón is normally served as a starter to a fine meal. Freshly sliced, very thin, served on a plate. It is usually eaten straight with no accompaniments, but there may be a bit of fresh bread or olive oil on the side.

Jamón could be the star of your next charcuterie board or grazing table. Jamón is also the perfect snack to have on hand. It makes a tasty pairing with melon, garlic & tomato, fresh basil, Manchego or crumbled with feta on a salad.

Speaking of feta we are also now selling the Meredith Dairy Goats Cheese range. Their famous spreadable goat cheese is marinated in blended Australian extra virgin olive oil, garlic, and herbs. This luxurious cheese is incredibly addictive and very versatile. It’s is a staple for a lot of our meals, we’re sure it will be for yours too.

What’s the best way to make great pork crackling?

What’s the best way to make great pork crackling? There’s many variations in the process to get great crunchy crackling, here’s ours. If you have a great technique you would like to share, let us know in the comments.

  • Scoring

    Use a knife, a Stanley knife works well, to score into the skin at 1cm intervals, being careful not to penetrate the fat through to the meat layer. If you go too deep you may lose valable meat juices.

  • Drying

    Remove from the packaging and leave uncovered in the fridge for a few hours or even overnight.

  • Seasoning

    Rub oil and plenty of salt into the scored skin, really getting it into the slits of the score marks. The fat under the skin reacts with the salt – it makes the skin puffy and crispy. If you don’t rub the salt in thoroughly the crackling will have a more chewy texture.

  • Heat

    Apply heat a hot oven is the best way to obtain crunchy crackling, between 220C-240C for about 45-60 mins depending on the size of your piece. Once it’s bubbled and cracked Then reduce heat back to 160C-180C for about another hour before a final heat blast to golden the crackling. Once the juices run clear, it’s ready.

Saturday 21st December is our Special Christmas Orders Delivery date. We are now taking orders for Christmas deliveries.

Country Style Smallgoods free range hams and fresh meat can now be ordered for all your festive occasions this Christmas. Every Christmas Sebastian sells out of his Beechwood Christmas hams and this year will be no different. So get in quick before they’re gone.

Ham is the traditional Australian dish that stars on our festive tables at Christmas in summer. Whatever way you like it. We do suggest you try it freshly sliced from the bone. with salads, in sandwiches and platters. Our hams are delivered fresh to you in vacuum packaging. They will keep beautifully fresh for two weeks in vacuum packaging.

And for those with bbq’s and celebrations planned in the lead up to Christmas we are delivering in Ballarat every fortnight until and including Saturday 21st December – our Christmas delivery run.  

Delivering Country Style

We’re rapt, thank you to the people of Ballarat and beyond for voting in our delivery ballot. We were overwhelmed with support to deliver in the Ballarat area and now that’s what we’re doing. The Country Style Smallgoods online shop is now taking orders for the first delivery Saturday, November 9th, 2019.

We’ll be delivering our smallgoods and some of the best fresh local produce in the region every second Saturday until Christmas, to the homes of Ballarat.

Make sure you place your order before 4 pm Wednesday 6th November for delivery on Saturday, November 9th. Alex will text you when your delivery is on its way but don’t worry if you’re not home we can leave it somewhere safe for you. Tell us where you would like us to leave it in your order note.

Your product will be delivered to you in an insulated box, which you can keep or we can pick it up from you on your next delivery.

To all of our customers who live further afield, we will be aiming to expand our delivery zone to include your area in the new year.

We have been delivering our freshly made smallgoods to lots of seriously great cafes, restaurants and food businesses in the Ballarat region and we often get asked if we do home deliveries. We have brought our quality smallgoods to markets and farm gates in the region and we are now considering delivering directly to you our customers.
